The world is full of beauty and wonder, diverse landscapes,
and many national parks protecting and showcasing
them. Western Colorado is home to such a place known
as the Colorado National Monument. Spanning a distance of
32 square miles, beginning in Grand Junction and ending in
Fruita, this spectacular landscape of sandstone and granite is
full of unique rock formations, dozens of hiking trails, and out-
door activities such as horseback riding and rock climbing.
For the less adventurous or active, the scenic drive from
one end to the other showcases the best views the Monument
has to oer, including the Coke Ovens, Devil’s Kitchen, and of
course, the Independence Monument. For the avid outdoor
enthusiast, there are so many trail systems at varying degrees
of diculty, that it is easy to find a trail to one’s self. There are
trails short and easy enough for small children, as well as chal-
lenging enough to give the more advanced hikers a worthwhile
experience. If visiting the Grand Valley for the first time, The
Monument is a must see.

Western Colorado has so many beautiful landscapes
and corresponding activities. The rivers, for exam-
ple, provide both calm stretches for paddle boarding
and rapids for the more adventurous kayaker or rafter. Grand
Junction itself, is named for the area in which the Colorado
River joins the Gunnison, while the western slope as a whole
has many other rivers, including the Yampa, White River and
San Juan.
Many reservoirs have also created areas for an abundance
of outdoor activities such as water skiing or tubing. Blue Mesa
is by far the largest of these, outside the town of Gunnison at
a size of over 940,000 acre-feet – nearly twice as large as the
next largest. And always remember to stop and enjoy the scen-
ery around the river valleys. Some are absolutely gorges!

Coulis Ingredients
3 cups Palisade peaches
1/4 cup basil
1/2 tsp Kosher salt
1/2 tsp black pepper
Brine Ingredients
3 cups tamari sauce
(gluten free soy sauce)
3 qts. Palisade peaches, peeled
and pitted
1 cup fresh basil
1 tbls black pepper
3 cups Canola oil
In Preparation
Marinate chicken using brine method below for 24-48 hours in advance. Make
coulis in advance or to order and serve hot.
Brine Method
Place all ingredients in 2 gallon container and blend until smooth. Pour brine
over chicken quarters and coat completely. Marinate for 24-48 hours.
Coulis Method
Blend all ingredients until smooth. Heat to 165º and serve plated, beneath chicken.

Recipe Method
Remove marinated chicken from refrigerator and bring to room temperature.
Preheat oven to 350º F. Place chicken in shallow pan and bake for 45 minutes
until internal temperature reaches 165º F. Liquid should run clear when chicken
is punctured. Plate rice, chicken quarters and baby carrots. Garnish chicken with
hot peach basil coulis. Serve immediately with rolls artisan bread and Grande
Vineyards Sauvignon Blanc or Riesling.

The amount of hiking trails in the Grand Valley is exten-
sive. The monument has dozens, the Mesa has dozens…
but the bookclis can sometimes be underrated. Aside
from Mount Garfield, a staple hike for locals, the bookclis
have trails on the back side where wild horses are often spot-
ted more frequently than other humans.
The trails can wind for as long as you feel like exploring,
with little distraction and plenty of views. While Mount Gar-
field is a steep challenge with a great valley-view payo, the
other side is a bit more of a relaxing experience. Not as steep
as the front side, this area is more accessible to people of all
skill levels and can be as long or short as desired. Make sure
not to try to touch the wild horses however, should you spot
them! They are lovely at a distance but are definitely wild.

The Grand Mesa is the largest flat top mountain in the

ski trails that loop the many lakes, skiing and snowboarding
at Powderhorn, and even sledding at the “old powderhorn” - a
well-maintained old hill that is perfect for smaller children.
Mesa Lodge and Powderhorn Resort are always full of people.
With its evergreens and aspens, the Mesa is a drastically dif-
ferent landscape from all the other surrounding mountains in
the Grand Valley such as the Book Clis as well as the Monu-
ment which are more sandstone and dry. This is just another

Pickled Red Onion Ingredients
2 quarts thinly sliced red onions
1 oz. Kosher salt
1 oz. rice vinegar
1 tbls. chopped basil, thyme
and tarragon
Pickled Red Onion Method
Thinly slice red onions. Toss onions with salt, vinegar and herbs. Mix until
onions are well coated. Store for 3 days to pickle before serving.

Anasazi Beans Method
Soak beans in water overnight. Drain beans. Small dice vegetables and add to
beans in large pot. Cover with water and bring to a simmer. Add herbs.
Simmer 90 minutes or until beans are tender. Dont rush them! Add salt and
pepper to finish. Cool, label and date.

Traces of Paleo Indians in the
Grand Valley date back to
11,000 B.C.E.. Ute Indians
occupied territory in Colorado well
before Spanish padres and ultimate-
ly surveyors came to explore the
region. Colorado was coined the
Centennial State in 1876.
Grand Junction was established
in 1881. Industry and popula-
tion grew rapidly with the Grand
Valley hosting railroads and main
highways. Successful agriculture
production included the neighbor-
ing towns of Fruita and Palisade
and the area flourished.
The “Grand” in Grand Junction
speaks of the historical Grand River.
It was renamed the upper Colorado
River in 1921. “Junction” refers to
the confluence of the Colorado and
Gunnison Rivers.
Mesa County has become a
major thoroughfare, where Inter-
state 70 and Highway 50 meet.
Today, the population of Grand
Junction is nearly 70,000 and it’s
not slowing down.

Western Colorado has other appealing qualities for
tourists and locals alike besides just outdoor recre-
ation. It also has an abundance of agricultural oer-
ings. Peaches are certainly one of the most popular items in

all over the states, and rivals the peaches in Georgia itself.
Tomatoes from Blaine’s Tomatoes in particular, will be some

thriving business is of course, wine!
Palisade is a prime spot for wine. It is home to over a
dozen wineries and the Fruit and Wine Byway: a road that
winds through Palisade and East Orchard Mesa, lined with
wineries, shops and fruit stands. Colterris, Maison le Belle
Vie, Two Rivers, Red Fox Cellars, and many others have been
producing Cabs, Merlots, Malbecs and more that rival Cali-
fornia. And over the years, they’ve only been getting better.
The community in Palisade is also very supportive of each
other. The winery employees and owners are always quick to
suggest other wineries to visit. They know the success of one,
is the success of all. So when you’ve finished a day of hiking,
horseback riding, or skiing, and are ready to wine down, look
no further than Palisade!
